  • Keep raw meat and poultry separate from other foods. Wash working surfaces (including cutting boards), utensils, and hands after touching raw meat or poultry.
  • Cook thoroughly.
  • Keep hot foods hot. Refrigerate leftovers immediately or discard.

  • Keep perishable items refrigerated at or below 40°F (4°C) to prevent bacterial growth.
  • Store raw meats, poultry, and seafood separately from ready-to-eat foods to prevent cross-contamination.
  • Use air-tight containers or packaging to store leftover food to maintain freshness and prevent contamination.

2. Thawing:

  • Thaw frozen food in the refrigerator, under cold running water, or in the microwave. Avoid thawing food at room temperature to prevent bacterial growth.
  • Cook thawed food promptly and do not refreeze unless it has been cooked thoroughly.

3. Cooking:

  • Cook food to the recommended internal temperature to kill harmful bacteria. Use a food thermometer to ensure accuracy.
  • Follow cooking instructions provided with the product or refer to safe cooking temperature guidelines for various types of food.

4. Serving:

  • Serve hot foods hot (above 140°F or 60°C) and cold foods cold (below 40°F or 4°C) to prevent bacterial growth.
  • Use clean utensils and serving dishes to avoid cross-contamination.
  • Wash hands thoroughly before handling food and use gloves when appropriate.

5. Cleaning and Sanitizing:

  • Clean and sanitize food preparation surfaces, utensils, and equipment regularly to prevent the spread of bacteria.
  • Use hot, soapy water for washing and a sanitizer solution for sanitizing. Follow manufacturer instructions for proper dilution and contact time.

6. Personal Hygiene:
